[social_warfare]Did someone say PIE? Pie is my all time favorite dessert and this gluten and dairy free chipotle chocolate pie is the stuff dreams are made of. If chocolate with a kick isn’t your thing, simply omit the chipotle powder to create a decadent chocolate cream pie. Scroll to the bottom to see just a few of the limitless variations you can make with the base recipe.
I’ve never met a pie I didn’t like, but it’s a food item I gave up when I went gluten and dairy free. Gluten and dairy free pies don’t tend to be all the rage at the family potluck. Truthfully I don’t eat, or want to eat a ton of sugar. It’s not my vice. You put TexMex in front and me and that’s another story… However, there’s a time of year when desserts are falling from the sky, and I long for a piece of really good decadent pie.
Perfect for the Holidays
The holidays are just around the corner and if you have food allergies, you know what that means. Watching everyone around you eat delightful looking desserts as far as the eye can see, while you nibble on some more kale. Ok, it’s not that bad, but this year I want to go into the holiday season with an incredible gluten and dairy free chocolate pie recipe. I don’t know if it’s my Texas roots, but I also love a bit of spice to my chocolate, hence the chipotle part of this pie’s name. Chipotle powder gives the chocolate cream filling the perfect kick. You may also leave the chipotle powder out if you prefer a non-spicy chocolate. Either way, this gluten and dairy free chipotle chocolate pie is sure to delight taste buds at any holiday event. The fact that it uses a no bake filling also makes it super easy to throw together!
Gluten Free Crust
The crust for this gluten and dairy free chipotle chocolate pie is incredibly simple, but packs a flavor punch. The slightly sweet cinnamony goodness is the perfect compliment to the rich, creamy, chocolate filling. Sometimes gluten free baked goods require a billion different ingredients, but not this time. The crust comes together with just a spoon and a mixing bowl. Almond flour, dairy free butter, cinnamon, and sugar is all you need to create the gluten free crust that leaves your house smelling amazing as it bakes. Make the crust ahead of time to ensure that it has completely cooled before adding the filling.
Dairy Free Filling
This dairy free no bake pie filling starts with Enjoy Life Dark Chocolate Chips. You can also you the milk chocolate version if your store doesn’t carry the dark chocolate. Take the CocoWhip out of the freezer and let thaw on the counter while you get the initial mixture prepped. Melt the chocolate chips and add the coconut oil to the warm chocolate. Whisk in the coconut milk, vanilla, chipotle powder and salt. Scoop out 1 cup of the mixture into a sauce pan. Warm up the mixture on low, stirring constantly so it doesn’t burn. After a couple minutes, vigorously whisk in the arrowroot powder and return the mixture to the rest of the filling. Using a hand mixer, mix for 2 minutes on medium. Add in the tub of CocoWhip that has been thawing on the counter for 10 minutes. You don’t want it to be completely thawed. Mix on high for 5 minutes. Try not to eat all of the delicious dairy free filling before adding it to the cooled gluten free pie crust. I know it’s hard, but you can do it. Refrigerate for two hours before serving.
You Don’t Have To Share
Try to share with your non-food allergy friends and family. They’ll never know it’s allergy free! If you decide to hide it in the back of the fridge and not share, your secret is safe with me.
