Holistic Obsession

It took me 40 years to figure out what I wanted to be when I grow up.

I was always the one without a specific passion. I tried many careers. I have a bachelor’s degree in public relations, and a master’s in elementary education. Soon I’ll be an FDN-P (Functional Diagnostic Nutrition Practitioner). I’m a self taught photographer. I’m a maker and seller of random things. I’ve started 5 businesses, 3 of which I still run.

This is my second time to go back to school later in life. I just never stopped being curious, and sort of let my heart follow where my curiosity led.

I’m an entrepreneur at heart. I love helping people. And I love the world of functional health that I’ve dabbled in much of my adult life via my own crazy health journey.

My dream job used to be a writer, then it was motivational speaker, and now I get to use my writing, motivation, and years of functional health curiosity to launch the career I was supposed to find all along.

If I look back at the wavy crazy seemingly random path I’ve taken, that maybe never made sense at the time, it is crystal clear. Everything I’ve ever done has led me
to this next season in my life. I get to used all of my random skills and life experiences to build my soon to be functional health coaching business.

Never stop trying the things that make you curious. Never stop chasing new dreams. Last night I realized I never took the chicken out to thaw for my Instant Pot chicken and rice. 🤦‍♀️. BUT I was able to figure out a way to give my kids a KILLER dinner anyway. 
I’ll never thaw my chicken again! 😜

4 cups chicken broth into instant pot.

Put in trivet. Dump bag of frozen boneless skinless chicken thighs on top of trivet (mind came out of the deep freezer and we’re literal blocks of frozen chicken). High pressure for 15 minutes and release pressure manually. 
Scoot chicken over and add 2 cups uncooked rice rice to bottom of the pot. 
Add in whatever seasonings you like. I used adobo, garlic powder and hamburger seasoning (why not?) Stir around and make sure you get some on the chicken. Replace lid and cook for 15 more minutes. Release pressure. Lightly shred chicken.  I prefer mine in larger chunks. 
I served it with frozen peas because my kids gobble them up. BUT you could also add in frozen peas, carrots or other veggies when you add in the rice. 
The chicken was tender and juicy, and the rice was creamy and perfectly cooked. I used organic basmati rice.
